Tortilla española (Spanish Omelet)

Spanish omelet or Tortilla española is a traditional Spanish dish usually made for breakfasts, snack-time, and tapas.

It is a classic dish native to Spain, and its name can sometimes bring confusion to foreigners. In most of the countries when you say the word “tortilla”, you are referring to a corn-flour wrapper or a chip for scooping dipping sauce. But not in Spain. In Spain, a tortilla is nothing like that. It’s an egg and potato pie. Here is a picture of a perfect Spanish omelet, so you can imagine it.

Preparation time: 30 minutes

Ingredients (for 4 persons):

  • 1 onion (optional)
  • 5 big potatoes
  • 5 eggs
  • 4 tablespoons extra virgin olive oil
  • Salt


  • Put the oil in a frying pan (a deeper one) and wait for it to warm up. While it warms up, thinly slice the onion, spray it with salt and put it in a pan. Cook it for 10 minutes until the onion starts to gain color. Use that time to wash, peel and slice the potatoes into thin circles.
  • After 10 minutes of cooking onion, put the potatoes in the pan. Give it a swirl with a spoon and put a cover over the pan.
  • Now break the eggs in a big bawl, and spice it with salt. Beat the eggs with an eggbeater, and then add the potatoes and onions. Swirl the ingredients thoroughly and put them all together back in the pan.
  • Let the omelet sit in the pan until you will a crust at the bottom. Flip it on the other side. Both sides should be golden.


When you’re finished, put the Tortilla Española on a plate and cut it into triangles. You can eat it warm or cold.

You can eat it with a piece of bread, and add a bit of ham to it if you are not a vegetarian.

Patatas Ali-Oli (Potatoes with Ali-Oli sauce)

Spanish people love Ali-Oli sauce and Ali-Oli potatoes are probably the most famous tapas recipes in bars, especially in Andalusia. You can buy Ali-Oli anywhere in Spain and eat it with whichever food you like. But nicely prepared and smooth Ali-Oli cannot even compete with the store-bought one. Once you make the perfect sauce at your home, you will never buy it in any store ever again.

Preparation time: 30 minutes

Ingredients (for 4 persons):

  • 2 big potatoes
  • 1 egg
  • 1 garlic clove
  • 150 ml sunflower oil
  • Fresh parsley
  • A couple of drops of lemon juice
  • Salt


  • Wash thoroughly the potatoes and without pealing them, put them in salty water to cook them. Cook them around 25 minutes
  • After you’re done cooking, take the potatoes out, peel them and cut them into little cubes. Now let them cool down.
  • In a tall glass, break an egg, put garlic clove inside, the oil and a few drops of lemon juice. Then you beat all of it with an electric beater until its smooth and well joint.
  • When you’re done with the sauce, chop the parsley (a handful) and swirl it in the sauce. Leave some leaves for the decoration.

Join the sauce and the potatoes, decorate with fresh parsley and have it with a cold beer!

Tip: Ali-Oli sauce also goes great with baked potatoes.

Pan con tomate (bread with tomato)

Pan con tomate is the simplest, but the most popular traditional Spanish breakfast. It may seem too simple now, but once you try it a couple of times, you will get the hype.

It is the most popular breakfast, but many bars serve it also as a tapa. It’s light, healthy and super tasty. So, how do you make it?

Preparation time: 15 minutes

Ingredients (for 4 persons):

  • 8 halves of ciabatta bread (like in the picture above) or slices of a big rustic bread
  • 4 big and ripe tomatoes (a read pear tomato is the best type)
  • 1 garlic clove
  • Extra virgin olive oil

Preparation and serving

  • Prepare the bread slices or the ciabatta halves and put them in the oven on 200 Celsius for about 10 minutes.
  • Cut the tomatoes in halves and use the grinder to grind them into a sauce-like texture. It doesn’t have to be too saucy; you can leave little cubes in it. Throw out the skin.
  • Take the bread out, cut the garlic clove into half and spread it over bread slices.
  • Put the tomato sauce on the bread and cover it with a bit of olive oil. Salt it a bit. And voila!
